The Best Raw Vegan Chocolate
RAW CHOCOLATES ARE A TREAT WITHOUT REGRETS, I ALWAYS KEEP SOME IN MY FRIDGE
When it comes to sweets I get weak, I love to treat my friends and my self with good chocolate. And I love to make chocolate myself, it is super easy and once you have the right ingredients you can get super creative with it and guess what - all Gluten Free - Dairy Free - Egg Free - Sugar Free and Raw. For my favorite chocolate cubes I use buckwheat, which is rich in minerals, proteins and fibre. Buckwheat helps in increasing weight loss, leveling out the blood sugar level and gives a glowing skin.
I use the raw cacao nobs from Caucawa, 100% raw, organic, fair trade, dark and rich cacao from Peru. And to bring in the extra exotic touch to the slightly bitter taste of raw cacao I use vegan dried fruits from Buah. This recipe is for the mass of 2 moles of ice cube moles, which will give you 24 big chunks.
YOU NEED
100 gramm Buckwheat
100 gramm Chia Seeds
100 gramm Chopped Almonds
50 gramm Coconut Flakes
50 gramm Dates
100 gramm Cacao Butter
100 gramm Raw Cacao Nibs
50 gramm Buah Dried Fruits
THE MAKING
Soak the buckwheat and the chia seeds in warm water for 1 hour Take the seeds out of the dates and slice them in half
Melt the cacao butter slowly, make sure it does not burn
Add the cacao nibs, which melt at around 45C and become a thick liquid with the butter
Take the buckwheat and chia seeds out of the water and put them in a blender Add coconut flakes and the dates, the dried fruits and blend it into a smooth paste
Now mix the seed-mix from the blender with the cacao-butter - cacao mix Make sure the mix is not too thick and not too liquid
Take any kind of moles or ice cube moles and press the mixture in the moles
Topp it with the chopped almonds and leave the moles in the freezer over night
MY EXTRA TIP: Try dried pomegranate seeds , cranberries or dried physalis for your chocolate mass
You can keep the chocolates in the fridge for around 4 weeks if you can resist them for so long
