My Humus Universe - Homemade & Vegan

RICH IN PROTEIN AND IRON. LOW IN CALORIES AND FATS, HUMUS IS MY HEALTHY - VEGAN ALLROUNDER
Humus has become one of my number one ingredients no matter what I make, it just comes so handy and is really easy to make. I use Humus as dip, as spread, as binder for soups or to fill wraps with. I like humus in different consistencies, depending on what I use it for and playing with diffrent colors and tastes makes your humus recipes endless. Using nuts and seeds in the humus will make it to a thick, creamy binder for sauces and sandwiches. Using less or none tahini and nuts will make it more thin and juicy.
You can store humus for at least two weeks in a container in your fridge. These portions are for 4 different bowls of humus.
YOU NEED
2 Cans of Drained and Rinsed Chickpeas
5 tbl spoons of Tahini
3 Garlic Cloves
Juice of 3 Lemons
1/2 Glass Sun-dried Tomatoes
1/2 Glass of Green Olives
1/2 Avocado
1 tea spoon Cumin Powder
1 tbl spoon Pine Nuts
1 tbl spoon Pumpkin Seeds
1 tbl spoon Turmeric Powder
1/2 bundle Parsley
1/2 bundle Cilantro
THE MAKING
Pure the washed and drained chickpeas in your food processor and blend them well
Add Tahini sauce, the juice of the lemons and the garlic cloves, blend again
Take the Humus paste out and wash the food processor
RED HUMUS Now pure the dried tomatoes and the parsley in the blender, blend it to smooth paste
Take a 1/4 of the plain humus in a bowl
Add the red tomatoes paste to the humus and mix it with a spoon to an even mixture
Shred the pine nuts roughly
Top with shredded pine nuts
YELLOW HUMUS
Pure another 1/4 of the humus in a bowl, add turmeric and cumin powder
Mix it with a spoon and topp with cress or sprouts
GREEN HUMUS
Put 1/4 of the plain humus in a bowl and put aside
Pure green olives and pumpkin seeds in your blender and mix it well
Now add the green mass to the humus and garnish with some left over pumpkin seeds
EXOTIC HUMUS
Pure the last 1/4 of humus into another bowl, put the bowl aside
Blend the cilantro with the avocado to a smooth paste
Add the cilantro-avocado mix to the humus and mix it with a spoon
Top the green humus with sprouts
