Raw Zucchini Pasta with Sunflower Seed Pesto

RAW ZUCCHINI PASTA THE LIGHT WAY TO ENJOY SPAGHETTI
You want to include more greens into your diet or are you looking for a more clean way of eating? Are you in the transition to a plant based lifestyle? This simple dish of raw vegan pasta is light, refreshing and offers the nutritional punch of omega-3 and plant proteins, low calories and no gluten.
YOU NEED
2 Large Zucchinis (per person)
1 Avocado
1 Bundle of Parsley
1/2 Bundle of Spring Onions
100 gramm Sunflower Seeds
50 gramm Sesame Seeds
2 Cloves of Garlic
Juice of 1 Lemon
3 table spoons of Olive Oil
Pepper, Rock Salt


THE MAKING Wash the zucchinis, clean them from dust and soil, cut the ends
Slice your zucchini noodles with a julienne slicer or a spiralizer
Slice them only until you reach the seeds
Keep your noodles in a bowl
Cut the seed steams into chunks and put aside
Now wash the parsley, cut the stems, cut the leaves an put in the blender
Wash the spring onions, clean them from roots and add to blender
Half the avocado, take the meat of both halfs and add to blender
Add the sunflower seeds and sesame in the blender
Peal the garlic and add in the blender
Squeeze the lemon and add the juice in the blender
Now cover all ingredients with olive oil
Season as you like with salt and pepper
Blend it all well to a smooth green pasta sauce
Add oil if needed
Pour the pesto over your noodles - enjoy this heaven of creamy fresh yummies
