Sugar-free Walnut Pumpkin Cookies
I am a cookie girl, that is for sure. Unfortunately most of the cookies you find in the shops are loaded with sugar and oil. Even in organic shops most of the cookies contain sugar, gluten and other ingredients which I don't want in my body. If I eat cookies I make them myself, it is fun, it is simple and quick and you know excatly what they contain.
This recipe is gluten free, oil free, sugar free and full of yumminess.

YOU NEED (approx. 15 Cookies):
150 gramm Rice Flavour
50 gramm Pumpkin Mash (Hokkaido)
50 gramm soaked Spelt Grains
50 gramm soaked Walnuts
50 gramm of your favorite Marmelade
4 Dates
2 cups Plant Milk
1 tea spoon Cinnamon
1 tea spoon Cardamom
1/2 tea spoon Baking Soda
THE MAKING
First wash and cut the pumpkin, boil it until it is soft and blend it to a smooth mash.
Take all ingredients and the pumpkin mash, pour it in a bowl, blend it or mix it with your hands.
The dough should not be too dry and not too watery, so add flavor or plant milk to your demands.
If you like the cookies very sweet you may add more dates and marmalade.
Form small patties and place them on a baking tray.
Bake the cookies at 180C for about 25 min.
Easy as that - enjoy this sweet pumpkin treat. You can store the cookies in a dry place for around 3 days.
