Homemade Peanut Butter

I was raised without Nutella, as my Mom used to be totally obsessed with organic foods, which was a very weird thing back in the 1980´s. Now a days I am so grateful for her visionary approach to nutrition and health. We did not get Nutella but one thing we always had at home was salted peanut butter. Spooning nut butter brings me back to my childhood. It is definitely one of my top comfort foods and I love to use it for so many things in the kitchen. It is a great binder in sauces, dips and makes smoothies more creamy. This super quick and simple recipe can be used with all kind of nuts.
The only important thing is: to use good a high speed blender.
FOR 2 FULL JARS (each ca. 700ml)
500 g organic, roasted peanuts
500g cold pressed organic coconut oil
300 ml plant milk ( I use unsweetend almond milk)
THE MAKING
Put the peanuts in a bowl and let them soak for 2 hours in the coconut oil
Now take the nuts and oil mix and pour it into your high speed blender
Start blending on a low level
Add the plant milk and rise the speed of blender to middle volume
Blend until the texture is smooth and even
If you want your butter more crunchy don't blend it too long
Depending on your taste add more oil or milk for a more liquid butter
Fill the butter in jars and enjoy as dip, spread or just to spoon it
